Ingredients

  • 1 mango, peeled and chopped
  • 1 pint strawberries, stemmed and quartered
  • 1/2 cup packed brown sugar
  • 3 tablespoons cornstarch
  • 3 tablespoons butter, broken into small bits
  • 2 1/4 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/3 cup melted butter

Instructions

  1. Toss the mango, strawberries, brown sugar, cornstarch, and butter to mix thoroughly.
  2. Sift the flour, baking powder, and salt together in a bowl.
  3. Mix in melted butter and milk until just combined.
  4. Dump the dough onto a floured board.
  5. Knead 2 to 3 times to bring together.
  6. Roll out into a 14 x 8-inch rectangle.
  7. Spread 2/3 of the fruit mixture evenly over the dough.
  8. Roll the dough up like a jelly roll.
  9. Cut into seven even portions and place in a 9-inch cake pan lined with parchment paper.
  10. Bake at 350°F (175°C) for 15 to 20 minutes.
  11. Place the remaining fruit mixture in a small saucepan and cook on medium heat until thick.
