Ingredients

  • 3 egg whites
  • 1 cup sugar
  • 20 Ritz crackers
  • 3/4 cup pecans, finely chopped
  • 1 teaspoon vanilla

Instructions

  1. Grease a 9-inch pie plate to rim.
  2. Beat egg whites until stiff peaks form.
  3. Crush Ritz crackers finely.
  4. Chop pecans finely.
  5. Add vanilla, sugar, crushed crackers, and chopped pecans to the beaten egg whites.
  6. Fold all ingredients together until well blended.
  7. Pour the mixture into the prepared pie plate.
  8. Bake in a preheated oven at 300°F (150°C) for 45 minutes; cool.
  9. Cover the cooled pie and refrigerate overnight.
  10. When ready to serve, top with Cool-Whip.
  11. This recipe also makes approximately 30 mini tarts.
  12. Bake mini tarts at 300°F (150°C) for 25 minutes.
