Ingredients

  • 60 Ritz crackers
  • 1 stick margarine
  • 1/2 cup chopped pecans
  • 1/2 gallon vanilla ice cream
  • 1 small box vanilla instant pudding
  • 1 small box butter pecan instant pudding

Instructions

  1. Roll Ritz crackers and place them into a 9 x 13-inch pan.
  2. Melt margarine and pour it over the crackers.
  3. Add chopped pecans and mix well.
  4. Reserve 1/2 cup of the pecan mixture for topping.
  5. Spread the remaining mixture evenly in the pan.
  6. Melt the vanilla ice cream until almost soupy.
  7. Mix in the small box of vanilla instant pudding.
  8. Pour the ice cream and pudding mixture over the crumb layer.
  9. Spread Cool Whip (whipped topping) over the entire dessert.
  10. Sprinkle the reserved 1/2 cup of topping on top.
  11. Freeze overnight before serving.
