Ingredients

  • 6 to 8 medium white turnips
  • 2 Tbsp. shortening or bacon drippings
  • 1 tsp. salt
  • 2 tsp. sugar
  • dash of pepper
  • 1/2 tsp. flour
  • 2 eggs

Instructions

  1. Prepare, cube, and boil turnips for 15 to 20 minutes in salted water.
  2. Drain and mash the cooked turnips well.
  3. Add shortening, salt, pepper, sugar, and flour to the mashed turnips.
  4. Beat egg whites until stiff and set aside.
  5. Beat egg yolks until light and then gradually stir into the hot turnips mixture.
  6. Fold in the beaten egg whites gently.
  7. Pour the mixture into a greased 1 1/2-quart casserole.
  8. Bake uncovered for 30 to 35 minutes or until puffy and lightly browned.
