Ingredients

  • 3 lb. cubed stewing beef
  • olive oil
  • 2 large green peppers, chopped
  • 1 lb. mushrooms, sliced
  • 2 to 3 cloves minced garlic
  • 5 medium onions, sliced
  • 1 1/2 lb. fresh tomatoes, seeded and chopped
  • 1/2 cup chopped parsley
  • A.1. sauce to taste

Instructions

  1. Brown the cubed stewing beef in a little olive oil until well browned.
  2. Add sliced onions, minced garlic (if using), chopped green peppers, chopped tomatoes, sliced mushrooms, and chopped parsley to the beef.
  3. Simmer the mixture until the beef is tender and the vegetables are cooked through.
  4. Add A.1. sauce and cognac, then cook for an additional 1 minute.
  5. Serve hot, preferably with fried potatoes.
