Roast Opossum

Ingredients

  • 1 possum
  • salt
  • pepper
  • 1 medium onion, diced
  • 1 medium apple, diced
  • 1 stalk celery, diced
  • 4 strips bacon
  • 1 cup seasoned bread cubes
  • 1 egg, beaten

Instructions

  1. Rub the opossum meat with salt and pepper inside and out.
  2. Stick lots of sassafras twigs into the outside of the meat.
  3. Place the prepared opossum in a roasting pan.
  4. Roast, uncovered, at 300°F for approximately half an hour per pound of meat, until cooked through.
  5. During roasting, add diced onion, apple, and celery around the meat if desired for additional flavor.
  6. Cook bacon strips until crisp, then crumble and mix with seasoned bread cubes and beaten egg to prepare stuffing.
  7. Add stuffing to the roasting pan during the last part of cooking to absorb flavors.
