Ingredients

  • 3 lb. boneless chicken breasts
  • 1/2 can frozen apple juice concentrate
  • 1 tsp. cornstarch
  • 1/2 tsp. cinnamon
  • 2 lemon slices

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Place the chicken breasts in a roasting pan.
  3. Combine the frozen apple juice concentrate, cornstarch, and cinnamon in a small saucepan, mixing well to blend.
  4. Add lemon slices to the saucepan.
  5. Cook over medium heat, stirring constantly, until the mixture thickens.
  6. Remove lemon slices from the glaze.
  7. Spoon part of the glaze over the chicken breasts.
  8. Bake in the preheated oven for approximately 45 minutes or until the chicken is cooked through.
