Ingredients

  • 1 lb. boneless skinless chicken breasts
  • 3/4 c. mashed potato flakes
  • 1/2 c. seasoned bread crumbs
  • 2 eggs

Instructions

  1. Flatten chicken breasts to 1/2-inch thickness and cut into 1-inch strips.
  2. In a bowl, combine mashed potato flakes and seasoned bread crumbs.
  3. In another bowl, lightly beat the eggs and add a dash of salt and black pepper.
  4. Dip each chicken strip into the beaten eggs, then into the potato-flake mixture to coat.
  5. In a skillet, cook the coated chicken strips in medium-hot oil for 4 to 5 minutes, until golden brown and cooked through.
