Ingredients

  • 2 quail
  • stewed apples
  • strip of bacon
  • salt
  • stewed prunes
  • mashed potatoes
  • butter

Instructions

  1. Pick, singe, draw, and wipe 6 quail.
  2. Cut the head off the quail.
  3. Stuff each quail with stewed prunes, stewed apples, or mashed seasoned potatoes.
  4. Lay a strip of bacon over each breast of the quail.
  5. Put the quail in a roasting pan and spread a little butter over each.
  6. Dust with salt.
  7. Roast in the oven for 18 minutes.
  8. Place the roasted quail on toast and garnish with watercress or lettuce.
