Ingredients

  • 1/2 cup chopped onion
  • 1/4 cup butter
  • 4 cups dry bread
  • water
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 eggs
  • 1 pound sausage
  • 1 (6 to 10 pound) goose

Instructions

  1. Preheat oven and prepare the goose for roasting as desired.
  2. Stuff the goose cavity with a mixture of bread, cooked sausage, and chopped onions.
  3. Season the outside of the goose with salt and pepper.
  4. Roast the goose until the internal temperature reaches a safe level, approximately 2 to 3 hours depending on weight.
  5. While the goose is roasting, prepare the stuffing by sautéing chopped onions in butter, then mixing with dry bread, beaten eggs, salt, and pepper.
  6. Bake the stuffing separately if preferred or stuff into the goose before roasting.
  7. Serve the roasted goose hot, accompanied by the stuffing and your favorite sauces.
