- Heat a large cast-iron skillet over medium heat.
- Add whole tomatoes, jalapeno peppers, and unpeeled garlic to the skillet.
- Cook for 15 minutes or until the tomatoes are blackened, turning frequently.
- Remove from the pan and let cool slightly.
- Peel the garlic and remove the stems from the jalapenos if desired.
- Chop the cooled tomatoes, jalapenos, and garlic.
- In a bowl, combine chopped tomatoes, jalapenos, garlic, finely chopped sweet onion, chopped cilantro, lime juice, and salt.
- Mix well and serve.
