A smoky, flavorful roasted tomato salsa with spicy jalapenos, garlic, and fresh herbs, perfect for dipping, topping, or serving alongside Mexican-inspired dishes.

Ingredients

  • 2 large ripe tomatoes (about 1 1/4 lb.)
  • 2 to 3 jalapeno peppers
  • 1 garlic clove (unpeeled)
  • 1/3 cup sweet onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 2 tablespoons fresh lime juice
  • 1/2 teaspoon salt

Instructions

  1. Heat a large cast-iron skillet over medium heat.
  2. Add whole tomatoes, jalapeno peppers, and unpeeled garlic to the skillet.
  3. Cook for 15 minutes or until the tomatoes are blackened, turning frequently.
  4. Remove from the pan and let cool slightly.
  5. Peel the garlic and remove the stems from the jalapenos if desired.
  6. Chop the cooled tomatoes, jalapenos, and garlic.
  7. In a bowl, combine chopped tomatoes, jalapenos, garlic, finely chopped sweet onion, chopped cilantro, lime juice, and salt.
  8. Mix well and serve.
