Juicy roasted tomatoes topped with seasoned bread crumbs and fresh herbs, offering a flavorful vegetarian side perfect for summer meals or light lunches.

Ingredients

  • 4 large sweet tomatoes
  • 4 slices of bread
  • 1 tsp. salt
  • 1/8 tsp. black pepper
  • 1/2 cup Mazola oil
  • pinch of garlic salt
  • pinch of onion powder
  • parsley, chopped

Instructions

  1. Wash and dry the tomatoes.
  2. Cut the tomatoes in halves and scoop out the seeds.
  3. Lay the tomato halves in a shallow pan coated with Mazola oil.
  4. Crumble the bread into a bowl.
  5. Add chopped parsley, basil, remaining oil, garlic salt, onion powder, salt, and pepper to the bread.
  6. Mix very lightly to combine the ingredients.
  7. Place the seasoned bread mixture on each half of the tomato.
  8. Bake in a 375°F oven for 25 to 30 minutes.
