Herb Tomatoes offer a vibrant blend of ripe tomatoes marinated in a fragrant mixture of herbs, garlic, and vinegar, perfect for light summer salads or elegant appetizers.

Ingredients

  • 6 whole ripe tomatoes
  • 2/3 cup oil
  • 1/4 cup vinegar
  • 1 clove minced garlic
  • 1/4 cup parsley
  • 1/4 cup green onions and tops
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 teaspoon dried thyme

Instructions

  1. Peel the tomatoes and slice them thick.
  2. Mix all ingredients including oil, vinegar, garlic, parsley, green onions, salt, pepper, and thyme.
  3. Marinate the sliced tomatoes in the mixture overnight.
  4. To serve, arrange the marinated tomatoes on a serving plate and spoon a small amount of marinade over them.
