- Clean the fish, leaving the scales intact, and cut into fillets. Leave the bones in.
- Bring to a boil the lemon juice, water, crushed red pepper, salt, pepper, Worcestershire sauce, and butter; then set aside.
- Preheat the grill to medium-high heat.
- Grill the fish on charcoal until flaky on the scale side first.
- Turn the fish and brown the meat side.
- Turn the fish back to the scale side.
- When half done, brush all of the prepared sauce onto the fish.
- Serve hot.
