Grilled rock fish with a spicy lemon Worcestershire glaze offers smoky, tangy flavors perfect for seafood lovers, ideal for casual outdoor meals or summer barbecues.

Ingredients

  • 4 fish fillets with scales
  • 2 c. lemon juice
  • 1 c. water
  • 1 tsp. salt
  • 2 Tbsp. crushed red pepper
  • 1 medium bottle Worcestershire sauce
  • 1 stick butter
  • 1 tsp. pepper

Instructions

  1. Clean the fish, leaving the scales intact, and cut into fillets. Leave the bones in.
  2. Bring to a boil the lemon juice, water, crushed red pepper, salt, pepper, Worcestershire sauce, and butter; then set aside.
  3. Preheat the grill to medium-high heat.
  4. Grill the fish on charcoal until flaky on the scale side first.
  5. Turn the fish and brown the meat side.
  6. Turn the fish back to the scale side.
  7. When half done, brush all of the prepared sauce onto the fish.
  8. Serve hot.
