Ingredients

  • 1 1/2 lb. round steak
  • 3 strips bacon
  • 1/4 cup chopped onion
  • 1 cup bread crumbs
  • 1/4 cup chopped parsley
  • 1/4 cup Parmesan cheese
  • 3 tablespoons olive oil
  • 1 can tomato paste
  • 2 cups hot water
  • 1 clove minced garlic
  • 1 1/2 teaspoons salt
  • 1/4 teaspoon pepper
  • pinch of basil or marjoram
  • cooked spaghetti or favorite pasta

Instructions

  1. Cut the steak into 6 oblong pieces (or have the butcher do this). Sprinkle each with salt and pepper.
  2. Pound the steak slices thin with the edge of a plate.
  3. Place half a strip of bacon on each piece of steak.
  4. Mix bread crumbs, chopped onion, chopped parsley, and Parmesan cheese. Spread this mixture over the bacon on each piece.
  5. Roll up each piece of steak and secure with toothpicks or string.
  6. Brown the rolls gently on all sides in hot oil.
  7. Mix tomato paste with the remaining ingredients, except the pasta.
  8. Pour the sauce over the rolls.
  9. Cover tightly and simmer for 1 1/2 hours or until tender.
  10. Remove toothpicks or string before serving.
  11. Serve the rolls over cooked spaghetti or your favorite pasta.
