- Mix thoroughly the brown sugar, oil, granulated sugar, eggs, and vanilla.
- Sift together the flour, baking soda, cinnamon, and salt, then stir into the first mixture; do not overbeat.
- Add peeled, diced tart apples and chopped walnuts to the batter.
- Pour the batter into a greased 13 x 9-inch pan.
- Bake at 375°F (190°C) for 55 to 60 minutes or until a toothpick inserted into the center comes out clean.
- Sprinkle with powdered sugar before serving.
