- Brown the skinned chicken pieces in olive oil in a frying pan.
- Place the browned chicken in a 6-quart covered stove-top casserole.
- Saute chopped garlic in the same frying pan until softened, then deglaze with red wine and add to the casserole.
- Add dissolved beef bouillon cubes, chopped bacon, diced roma tomatoes, and whole marjoram to the casserole.
- Bring the mixture to a boil.
- Cover and simmer for 40 minutes.
- Add quartered artichoke hearts and simmer for an additional 10 minutes.
- Skim off any fat from the surface of the dish.
- In a small saucepan, combine flour and butter to form a roux and cook for 2 minutes, stirring until smooth.
- Add the roux to the chicken mixture and heat for a few minutes. Season with ground pepper to taste.
