Ingredients

  • 8 pieces chicken, skinned
  • 2 Tbsp. olive oil
  • 4 cloves garlic, chopped
  • 1 c. red wine
  • 4 beef bouillon cubes
  • 2 cups water
  • 6 slices bacon, chopped
  • 1 c. roma tomatoes, diced
  • 2 tsp. whole marjoram
  • 14 oz. artichoke hearts, quartered
  • 1 Tbsp. butter
  • 1 Tbsp. flour

Instructions

  1. Brown the skinned chicken pieces in olive oil in a frying pan.
  2. Place the browned chicken in a 6-quart covered stove-top casserole.
  3. Saute chopped garlic in the same frying pan until softened, then deglaze with red wine and add to the casserole.
  4. Add dissolved beef bouillon cubes, chopped bacon, diced roma tomatoes, and whole marjoram to the casserole.
  5. Bring the mixture to a boil.
  6. Cover and simmer for 40 minutes.
  7. Add quartered artichoke hearts and simmer for an additional 10 minutes.
  8. Skim off any fat from the surface of the dish.
  9. In a small saucepan, combine flour and butter to form a roux and cook for 2 minutes, stirring until smooth.
  10. Add the roux to the chicken mixture and heat for a few minutes. Season with ground pepper to taste.
