- Cook sugar, margarine, dark corn syrup, and evaporated milk together over low heat for 30 minutes.
- Stir the mixture well.
- Add chopped nuts or coconut and cook on high heat until a few drops form a soft ball when tested (230° to 240° on a candy thermometer).
- Stir constantly during this stage.
- Add vanilla, then cool to lukewarm and beat hard until the mixture loses its gloss and starts to hold shape.
- Pour into a large buttered pan or spoon into small mounds on wax paper.
- Store in an airtight container.
