Ingredients

  • 1 cup chopped celery
  • 1 cup chopped onion
  • 1/4 cup margarine
  • 1/4 cup water
  • 2 packages frozen lima beans
  • 2 tablespoons flour
  • 1/2 cup half and half
  • 1/2 teaspoon salt
  • 1/2 teaspoon nutmeg
  • dash pepper

Instructions

  1. In a Dutch oven, sauté celery and onions in margarine until soft.
  2. Add water and lima beans; cook until tender.
  3. Add flour, half and half, salt, nutmeg, and pepper; stir until thickened.
  4. Add mushrooms and stir to combine.
  5. Pour mixture into a greased casserole dish.
  6. Cover and bake at 325°F for 35 to 40 minutes.
