Ingredients

  • 2 cups flour
  • 2 cups sugar
  • 2 eggs
  • 2 teaspoons baking soda
  • 1 tall can crushed pineapple
  • 1 small can evaporated milk
  • 1 cup sugar
  • 1 stick oleo
  • 1/4 teaspoon vanilla
  • coconut, toasted (about 1 cup)

Instructions

  1. Mix the flour, sugar, eggs, baking soda, and crushed pineapple with a spoon until well combined.
  2. Pour the batter into a 13 x 9-inch pan.
  3. Bake at 350°F (175°C) for 30 minutes.
  4. While the cake is baking, prepare the frosting by creaming the oleo with sugar and vanilla.
  5. Spread the frosting over the warm cake.
  6. Toast the coconut and sprinkle over the frosted cake before serving.
