Ingredients

  • 4-7 mid-size potatoes
  • 1 can sauerkraut
  • 1 package kielbasa sausage
  • 1/2 cup chopped parsley
  • 1 small bottle Thousand Island dressing

Instructions

  1. Peel potatoes and cut into chunks.
  2. Boil potatoes for approximately 10 minutes or until a fork can be easily inserted, then drain.
  3. Add drained potatoes to a baking dish.
  4. Spread sauerkraut over the potatoes.
  5. Place kielbasa chunks on top of the sauerkraut.
  6. Sprinkle chopped parsley over the ingredients.
  7. Drizzle Thousand Island dressing over the casserole.
  8. Bake in the oven at 375°F (190°C) for 20 minutes or until heated through and slightly browned.
