  2. In a colander lined with a clean towel or cheesecloth, drain shredded potatoes and onion.
  3. Wrap the potatoes and onion in the towel and squeeze to remove as much water as possible.
  4. In the same large bowl, beat the eggs.
  5. Add the shredded potatoes and onion, flour, salt, and pepper. Toss together until well mixed.
  6. Heat a 12-inch skillet over medium heat and add hot salad oil.
  7. Drop the mixture by scant 1/4 cupfuls into 4 mounds in the skillet.
  8. Flatten each mound with a pancake turner to make a 4-inch pancake.
  9. Cook until golden brown on one side, about 4 minutes.
  10. Turn and brown on the other side.
  11. Remove the pancakes to a paper towel-lined cookie sheet to drain and keep warm.
  12. Repeat with remaining mixture, stirring occasionally, until about 12 pancakes are cooked.
  13. Garnish with parsley sprigs or sour cream before serving.
