Ingredients

  • 3 1/2 cups flour
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 1 teaspoon baking powder
  • 1 cup buttermilk
  • 1/2 cup fresh orange juice
  • 1 egg
  • 1 cup raisins

Instructions

  1. Preheat the oven to 350°F (175°C). Combine flour, salt, sugar, and baking powder in a bowl.
  2. Make a well in the center and pour in buttermilk and orange juice; mix well.
  3. Add egg, raisins, and orange peel; beat until smooth, noting the dough will be sticky.
  4. Knead lightly on a well-greased 9-inch round cake pan.
  5. Cut an X across the top of the loaf.
  6. Bake for 40 minutes or until a cake tester inserted in the center comes out clean.
  7. Serve warm.
