Ingredients

  • 1 package lemon Jell-O
  • 2 packages Philadelphia cream cheese
  • 1 cup finely chopped celery
  • 2/3 cup nuts (pecans or walnuts)
  • 1 small jar pimentos
  • 1 can (No. 2) crushed pineapple
  • 1/8 teaspoon salt
  • 1/2 pint whipped cream

Instructions

  1. Dissolve the lemon Jell-O in the juice from the No. 2 can of crushed pineapple by heating and then chilling.
  2. Mash the Philadelphia cream cheese until smooth.
  3. Finely chop the celery.
  4. Chop the nuts (pecans or walnuts).
  5. Drain the pimentos and chop if desired.
  6. In a mixing bowl, combine the dissolved Jell-O, mashed cream cheese, chopped celery, nuts, pimentos, crushed pineapple, and salt.
  7. Fold in the whipped cream gently until well blended.
  8. Pour into a mold or serving dish and chill until set.
