Ingredients

  • 1 lb. stewing beef
  • 2 lb. potatoes
  • 2 large onions
  • 3 to 4 bay leaves
  • 12 to 15 peppercorns
  • salt
  • butter for frying
  • about 7 oz. cooked ham
  • finely chopped parsley

Instructions

  1. Cut the stewing beef into 3/4-inch squares.
  2. Blanch the beef and rinse in cold water.
  3. Chop the onions finely.
  4. Peel and cut up the potatoes.
  5. Brown 2 tablespoons of butter in a thick-bottomed saucepan.
  6. Turn the beef in the butter until just colored.
  7. Add the onions and simmer until transparent.
  8. Add the potatoes, bay leaves, and peppercorns, then cover with water.
  9. Simmer gently until all the potatoes have mashed up.
