Sally'S Chili Cornbread

Ingredients

  • 1 c. margarine
  • 1/4 c. sugar
  • 4 eggs
  • 1 (4 oz.) can green chilies, seeded and chopped
  • 1 (17 oz.) can creamed corn
  • 1/2 c. shredded Monterey Jack cheese
  • 1/2 c. shredded Cheddar cheese
  • 1 c. flour
  • 1 c. cornmeal
  • 4 tsp. baking powder
  • 1/2 tsp. salt

Instructions

  1. Cream margarine and sugar.
  2. Blend in eggs.
  3. Stir in chilies, corn and cheeses.
  4. Combine remaining ingredients and add to corn mixture.
  5. Pour into greased 11 x 7-inch baking dish.
  6. Bake at 325° for 50 minutes.
  7. Serve warm with chili and green salad.
