Ingredients

  • 4 eggs
  • 2 cups milk
  • 1 (10 3/4 oz.) can cream of mushroom soup
  • 6 oz. package Caesar croutons
  • 1 lb. can salmon, flaked
  • 1/2 cup chopped green pepper
  • 1/4 cup chopped onion
  • 2 Tbsp. grated Parmesan cheese

Instructions

  1. In a medium bowl, beat together eggs, milk, and cream of mushroom soup.
  2. Stir in croutons, flaked salmon, chopped green pepper, and chopped onion.
  3. Pour the mixture into a buttered baking dish measuring approximately 11 3/4 x 7 1/2 x 1 3/4 inches.
  4. Sprinkle grated Parmesan cheese over the top.
  5. Bake at 350°F for 45 minutes or until set in the center.
