Salmon Cheese Log

Instructions
- Drain the salmon, reserving 2 teaspoons of liquid.
- Flake the salmon into a bowl.
- Combine the reserved liquid with the salmon, cream cheese, minced onion, and liquid smoke; blend thoroughly.
- Refrigerate the mixture for several hours to firm up.
- Form the mixture into a 6 to 8-inch long log shape.
- Sprinkle chopped parsley over the top of the log.
- Form pimiento strips into a small bow and place on top center of the log for garnish.
- Serve with crackers of your choice.
