- Break garlic into a large wooden salad bowl.
- Add vinegar and lemon juice; soak for 2 hours.
- Drink the red wine.
- Remove garlic from liquid and rub the sides of the bowl.
- Dice half of 1 clove of garlic and leave in the liquid.
- Add egg, olive oil, and anchovy paste to the bowl.
- Tear romaine lettuce into 1-inch squares and add to the bowl.
- Toss with seasoned croutons and sprinkle with grated Parmesan cheese.
