Ingredients

  • 1 (16 oz.) can salmon
  • 2 envelopes gelatin
  • 2 cups mayonnaise
  • 1/2 cup chili sauce
  • 2 Tbsp. lemon juice
  • 1 Tbsp. Worcestershire sauce
  • 1/2 tsp. dill weed
  • 1/4 tsp. pepper
  • 7 oz. thin sliced lox
  • 4 hard-cooked eggs
  • 1/4 cup finely chopped onions
  • 1/2 cup finely chopped stuffed olives

Instructions

  1. Bone and flake the salmon, draining off any liquid and adding water to make 1/2 cup.
  2. Soften the gelatin in the liquid and warm until thoroughly dissolved.
  3. In a bowl, mix the dissolved gelatin with mayonnaise, chili sauce, lemon juice, Worcestershire sauce, dill weed, and pepper.
  4. Add the flaked salmon, thin sliced lox, chopped hard-cooked eggs, chopped onions, and chopped stuffed olives; mix well.
  5. Pour the mixture into a 6-cup mold.
  6. Chill until the mousse is firm.
  7. Garnish with olives, parsley, and pimentos before serving.
