Ingredients

  • 2 tsp vegetable oil
  • 1/2 cup chopped onion
  • 1 garlic clove, minced
  • 1 (8 oz) can tomato sauce
  • 1/2 tsp dried oregano
  • 4 oz spaghetti
  • 1 can tuna in water, drained and flaked
  • 1/2 cup cooked peas
  • 1 cup low-fat cottage cheese
  • 1 egg
  • 1/4 tsp pepper

Instructions

  1. In a small saucepan over medium-high heat, heat the vegetable oil.
  2. Add chopped onion and minced garlic; cook, stirring occasionally, about 3 minutes.
  3. Add tomato sauce and dried oregano; bring to a boil.
  4. Reduce heat, cover, and simmer, stirring occasionally, about 15 minutes.
  5. Meanwhile, cook spaghetti according to package instructions, then drain.
  6. In a large bowl, combine cooked spaghetti, drained and flaked tuna, cooked peas, low-fat cottage cheese, and the slightly beaten egg.
  7. Mix in the cooked tomato sauce mixture and season with pepper.
  8. Transfer the mixture to a baking dish and bake at 375°F (190°C) for about 15-20 minutes until heated through and bubbly.
