Ingredients

  • 1 lb. can salmon
  • 8 oz. cream cheese
  • 1 Tbsp. lemon juice
  • 2 tsp. grated onion
  • 1 tsp. horseradish
  • 1/4 tsp. salt
  • 1/2 tsp. liquid smoke
  • 1/2 cup chopped pecans
  • 3 Tbsp. chopped parsley

Instructions

  1. Drain and flake the salmon, removing skin and bones.
  2. In a bowl, combine the salmon, cream cheese, lemon juice, grated onion, horseradish, salt, and liquid smoke. Mix thoroughly.
  3. Chill the mixture several hours to firm up.
  4. Mix chopped pecans and parsley in a separate bowl.
  5. Shape the chilled salmon mixture into a ball.
  6. Roll the salmon ball in the pecan and parsley mixture to coat evenly.
  7. Garnish with cherry tomatoes before serving.
