Salmon Surprise Cups are savory, bite-sized appetizers combining flaked salmon with mushroom soup and bread crumbs, baked to perfection—perfect for parties or quick weeknight dinners.

Ingredients

  • 1 (1 lb.) can salmon, flaked
  • 1/3 cup mushroom soup
  • 3/4 cup bread crumbs
  • 1/3 cup liquid or juice
  • 1/4 cup catsup
  • 2 eggs, beaten
  • 2/3 cup mushroom soup

Instructions

  1. Drain the liquid from the salmon into a measuring cup, adding water to make 1/3 cup.
  2. Flake the salmon into a bowl and add the mushroom soup, bread crumbs, liquid or juice, catsup, and beaten eggs; mix well.
  3. Spoon the mixture into 5 greased custard cups.
  4. Bake at 350°F (175°C) for about 35 minutes until heated through and browned on top.
