Ingredients

  • 1 onion, minced
  • 2 garlic cloves, minced
  • 1/2 c. extra virgin olive oil
  • 2 lb. ripe tomatoes or 2 (28 oz.) cans whole tomatoes
  • pinch of sugar
  • salt
  • pepper

Instructions

  1. In a medium-large saucepan over medium heat, cook the minced onion and garlic in the extra virgin olive oil, stirring occasionally for 5 minutes.
  2. Stir in the ripe tomatoes or canned whole tomatoes, add a pinch of sugar, salt, and pepper.
  3. Simmer, covered, stirring occasionally for 25 minutes.
