Ingredients

  • 1/3 cup mayonnaise
  • 2 tablespoons sour cream
  • 1/4 cup salsa
  • 1 tablespoon minced fresh parsley
  • 3 cups cubed cooked potatoes
  • 1 celery rib, thinly sliced
  • 1/4 cup chopped onion
  • 1/2 cup shredded Cheddar cheese

Instructions

  1. In a bowl, combine mayonnaise, sour cream, salsa, and parsley.
  2. In a large bowl, combine cubed cooked potatoes, sliced celery, and chopped onion.
  3. Add the dressing to the potato mixture and toss to coat.
  4. Stir in shredded Cheddar cheese.
  5. Cover and refrigerate for at least 1 hour before serving.
