Ingredients

  • 1 medium potato
  • 3 Tbsp. cornmeal
  • 1 tsp. salt
  • 1 c. milk
  • 1/4 tsp. baking soda
  • 1 1/2 c. boiling water
  • 2 tsp. sugar
  • 1 pkg. active dry yeast
  • 5 1/2 to 6 c. plain flour
  • 1 large egg white (optional)

Instructions

  1. Peel and finely chop the potato.
  2. Place the chopped potato in a medium bowl and stir in the boiling water, cornmeal, sugar, and salt.
  3. Cover the mixture and set aside overnight at room temperature to create the starter.
  4. The next day, add the yeast to the starter mixture and let it activate.
  5. Gradually mix in the flour until a dough forms.
  6. Knead the dough until smooth and elastic.
  7. Let the dough rise in a warm place until doubled in size, about 1 to 2 hours.
  8. Preheat the oven to 375°F (190°C).
  9. Punch down the dough and divide it into two loaves.
  10. Shape each into an 8-inch loaf and place in greased pans.
  11. Optional: Brush the tops with egg white for a shiny crust.
  12. Bake for 40-45 minutes until golden brown and sounds hollow when tapped.
