Ingredients

  • 6 chicken breast halves, boned and skinned
  • 2 tsp ground cumin
  • 1 tsp garlic salt
  • 1 Tbsp vegetable oil
  • 1 cup canned black beans, rinsed and drained
  • 8 oz can whole kernel corn, drained
  • 2/3 cup picante sauce
  • 1/2 cup red bell pepper, diced
  • 2 Tbsp cilantro

Instructions

  1. Chop the red bell pepper.
  2. Sprinkle both sides of chicken breasts with 1 teaspoon cumin and garlic salt.
  3. Heat vegetable oil in a 12-inch skillet over medium-high heat.
  4. Add chicken and cook for 3 minutes on each side.
  5. In a medium bowl, combine black beans, corn, picante sauce, diced red bell pepper, and remaining 1 teaspoon cumin.
  6. Turn the chicken and spoon the bean mixture evenly over the chicken.
  7. Reduce heat to medium and cook uncovered for 6 to 7 minutes or until the chicken is cooked through.
