Ingredients

  • 5 qt. freshly popped popcorn
  • 1 c. butter
  • 2 c. brown sugar
  • 1/2 c. corn syrup
  • 1 tsp. salt
  • 1/2 tsp. baking soda

Instructions

  1. Spread the freshly popped corn in a large pan and keep warm in a very low oven at 250°F to keep it crisp.
  2. Combine the butter, brown sugar, corn syrup, and salt in a 2-quart heavy pan.
  3. Place the pan over medium heat and cook until the sugar dissolves, then continue boiling until it reaches the firm ball stage (240°F), about 5 minutes.
  4. Remove from heat and stir in the soda; the syrup will foam.
  5. Pour the hot caramel mixture over the warm popcorn in a fine stream, stirring to coat evenly.
  6. Return the coated popcorn to the oven and bake for 45 to 50 minutes, stirring well every 15 minutes.
  7. Cool the caramel corn before serving or storing.
