- Spread the freshly popped corn in a large pan and keep warm in a very low oven at 250°F to keep it crisp.
- Combine the butter, brown sugar, corn syrup, and salt in a 2-quart heavy pan.
- Place the pan over medium heat and cook until the sugar dissolves, then continue boiling until it reaches the firm ball stage (240°F), about 5 minutes.
- Remove from heat and stir in the soda; the syrup will foam.
- Pour the hot caramel mixture over the warm popcorn in a fine stream, stirring to coat evenly.
- Return the coated popcorn to the oven and bake for 45 to 50 minutes, stirring well every 15 minutes.
- Cool the caramel corn before serving or storing.
