Ingredients

  • 3 to 4 cups cooked rice
  • 1/2 pound smoked Cheddar, grated
  • 1 cup chopped walnuts or pecans
  • 1 cup peas
  • 1/2 to 1 teaspoon minced garlic
  • 1/2 cup evaporated milk

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Combine cooked rice, grated smoked Cheddar, chopped walnuts or pecans, peas, and minced garlic in a mixing bowl.
  3. Place the mixture into a 9 x 9-inch baking dish.
  4. Pour evaporated milk around the sides of the dish.
  5. Bake for 20 to 30 minutes until the edges are browned.
  6. Optional: top with cayenne or paprika before serving.
