Ingredients

  • 12 Tbsp. butter
  • 3 egg yolks
  • 1 Tbsp. lemon juice
  • 1 Tbsp. hard butter
  • 1 Tbsp. heavy cream

Instructions

  1. Melt 12 tablespoons of butter and set aside, keeping it warm.
  2. In a separate saucepan, whisk egg yolks until thick, then beat in the tablespoon of lemon juice.
  3. Place that pan over low heat and stir in the tablespoon of hard butter.
  4. When blended, remove the pan from heat and beat in the heavy cream.
  5. Slowly add the melted butter while whisking constantly until the sauce is smooth and thickened.
