  • 2 Tbsp. margarine
  • 2 cloves garlic
  • 1 (10 1/2 oz.) can chicken consomme
  • 1/2 to 1 c. sherry

  2. Hold out the sherry until later.

  4. Just before serving, add the cooked shrimp and sherry to the sauce.
  5. Serve the saucy shrimp over rice.

Tips & Substitutions

For added flavor, consider using fresh herbs instead of dried ones; fresh parsley can enhance the dish significantly. If you prefer a creamier sauce, you can substitute some of the tomato sauce with heavy cream. When selecting shrimp, opt for large or jumbo varieties for a more substantial bite. Make sure the shrimp are well-drained to avoid excess water in the sauce.

Serving Suggestions

Serve the saucy shrimp over fluffy rice to soak up the delicious sauce, and consider pairing it with a light salad or steamed vegetables for a well-rounded meal. This dish also pairs beautifully with a side of garlic bread. For a heartier option, serve it alongside Summer Squash Soup for a comforting dinner.

Storage & Reheating

Store any leftover saucy shrimp in an airtight container in the refrigerator for up to 3 days. To reheat, gently warm the shrimp and sauce in a saucepan over low heat, stirring occasionally. Avoid overheating, as shrimp can become rubbery if cooked too long. You may add a splash of water or broth to loosen the sauce if needed.

Frequently Asked Questions

Can I use raw shrimp instead of cooked shrimp?

Yes, you can use raw shrimp! Just be sure to cook them in the sauce until they are pink and opaque, which usually takes about 5-7 minutes. Adjust the cooking time accordingly if you're using larger shrimp.

What can I substitute for sherry?

If you don't have sherry on hand, you can substitute it with white wine or even a splash of lemon juice mixed with water. This will maintain the acidity and brightness in the dish, though the flavor will vary slightly.

Is this dish suitable for meal prep?

Absolutely! Saucy shrimp is great for meal prep. Just store the shrimp and sauce separately until you're ready to eat to keep the shrimp from getting rubbery. Reheat and serve over fresh rice for a quick and easy meal.
