Ingredients

  • 2 eggs
  • 2 cups baking mix
  • 1/2 cup yellow cornmeal
  • 2/3 cup milk
  • 1/2 teaspoon salt
  • 1/2 teaspoon dry mustard
  • 3/4 cup frozen whole kernel corn, drained
  • 12 ounces bulk pork sausage, cooked and drained

Instructions

  1. Grease the bottoms of 12 muffin cups or line with paper baking cups.
  2. Beat the eggs slightly in a mixing bowl.
  3. Stir in baking mix, cornmeal, milk, salt, and mustard until just moistened.
  4. Fold in the drained corn and cooked sausage.
  5. Divide the batter evenly into the prepared muffin cups.
  6. Bake at 400°F (200°C) until golden brown, about 20 to 22 minutes.
  7. Serve hot.
