A hearty sausage crumble casserole featuring savory sausage, crunchy water chestnuts, and tender rice, perfect for comforting family dinners or casual gatherings.

Ingredients

  • 1 lb Owens sausage
  • 2 cups chopped celery
  • 1 cup chopped onion
  • 1 can water chestnuts, drained and chopped
  • 1 can chicken noodle soup
  • 1 cup water
  • 1 small can mushroom pieces
  • salt and pepper to taste
  • 2/3 cup raw rice
  • 1 cup boiling water

Instructions

  1. Brown the sausage in a skillet. Drain most of the drippings.
  2. Sauté the onion and celery in the remaining drippings until tender.
  3. Add the chopped water chestnuts, chicken noodle soup, rice, and 1 cup of water. Season with salt and pepper.
  4. Add the mushroom pieces and cooked sausage to the mixture. Mix well.
  5. Pour in 1 cup of boiling water. Grease a casserole dish and transfer the mixture.
  6. Bake in a 350°F oven for 1 hour until heated through and bubbly.
