- Brown the sausage in a skillet. Drain most of the drippings.
- Sauté the onion and celery in the remaining drippings until tender.
- Add the chopped water chestnuts, chicken noodle soup, rice, and 1 cup of water. Season with salt and pepper.
- Add the mushroom pieces and cooked sausage to the mixture. Mix well.
- Pour in 1 cup of boiling water. Grease a casserole dish and transfer the mixture.
- Bake in a 350°F oven for 1 hour until heated through and bubbly.
