Ingredients

  • 1/2 lb. pork sausage meat, crumbled
  • 1/2 cup sliced green onions
  • 1 clove garlic, minced
  • 2 tablespoons oil
  • 3 cups cooked rice
  • 3 tablespoons soy sauce
  • 3 eggs, slightly beaten
  • 1 tablespoon chopped parsley (optional)

Instructions

  1. In a large skillet, sauté sausage, green onions, and garlic in oil until the sausage is browned.
  2. Stir in cooked rice and soy sauce; cook and stir for 3 minutes.
  3. Push rice mixture to the sides of the skillet; pour beaten eggs into the center.
  4. When eggs begin to set, break them up with a fork and stir into the rice mixture.
  5. Sprinkle with chopped parsley if desired; serve immediately.
