Ingredients

  • 6 lb. lean pork
  • 2 lb. fat pork
  • 2 2/3 Tbsp. salt
  • 2 tsp. sage
  • 1 1/2 Tbsp. pepper
  • 1/2 tsp. red hot pepper

Instructions

  1. Cut the lean and fat pork into small pieces.
  2. Sprinkle the salt, sage, pepper, and red hot pepper over the meat and mix well.
  3. Grind the seasoned meat to make sausage.
