Delicately sautéed fish fillets with a crispy wheat germ coating, complemented by fresh parsley and lemon wedges, perfect for a light, flavorful meal suitable for seafood lovers.

Ingredients

  • 1 1/2 lb. fish fillets (cod, haddock, sole, flounder)
  • 1/2 c. milk
  • 1/2 c. wheat germ
  • 2 shallots, chopped
  • 1 1/2 Tbsp. cold pressed oil
  • 2 1/2 Tbsp. butter
  • 3 Tbsp. parsley, minced
  • 1 lemon, cut into wedges

Instructions

  1. Dip the fish fillets in milk.
  2. Then coat the fish in wheat germ.
  3. Saute chopped shallots in cold pressed oil and butter in a skillet for 2 minutes.
  4. Add the fish to the skillet and cook for 3 minutes on one side.
  5. Flip the fish and cook for another 2 minutes on the other side until the fish is cooked through and easily comes apart.
  6. When serving, toss minced parsley over the fish.
  7. Arrange lemon wedges on the side.
