Ingredients

  • 1 1/8 pounds green beans
  • baking soda
  • 3 tablespoons olive oil
  • 3 garlic cloves chopped
  • salt
  • 1 teaspoon vinegar
  • 1 tablespoon flour

Instructions

  1. Dice green beans.
  2. Heat a large pot of salted water and bring to a boil.
  3. Add green beans.
  4. When water returns to a boil, add a pinch of baking soda.
  5. Blanch green beans for 8-10 minutes, drain and immediately rinse in cold water.
  6. Drain again and set aside.
  7. Heat olive oil in a pan and saute finely chopped garlic.
  8. Season with salt. When garlic releases its aroma, add vinegar.
  9. Add drained green beans and saute briefly.
  10. Add flour and stir well.
  11. Cook for 2 minutes over low heat, stirring constantly so that flour cooks briefly and mixes with green beans.
  12. Season with more vinegar, if needed.
