Ingredients

  • 2 1/2 lb. string beans
  • 4 large tomatoes
  • 10 Tbsp. butter or margarine
  • 1 large onion
  • 1/2 lb. mushrooms
  • 3 cloves garlic
  • 1 tsp. dry basil
  • 1 tsp. oregano
  • 1 tsp. salt

Instructions

  1. Steam the string beans until tender, then rinse in cold water and drain.
  2. Cut the tomatoes into thin wedges and set aside.
  3. In a large skillet, melt 10 tablespoons of butter or margarine over medium heat.
  4. Add chopped onion and cook until translucent.
  5. Stir in sliced mushrooms and cook until browned.
  6. Add minced garlic, dry basil, oregano, and salt; cook for 1-2 minutes until fragrant.
  7. Combine the cooked beans with the sautéed mixture and cook for another 3-4 minutes to blend flavors.
  8. Sprinkle the soft bread crumbs and grated Parmesan cheese over the top.
  9. Serve hot, garnished with additional Parmesan if desired.
