Ingredients

  • 5 lb. cooked chicken (boneless), pulled in pieces
  • 1 cup pimento, diced
  • 1 (#10) can Veg-All mixed vegetables
  • 1 cup chicken fat or margarine
  • 1 cup flour
  • 1 quart milk
  • 1 quart chicken stock
  • 2 teaspoons sage
  • 1 tablespoon salt
  • 2 teaspoons pepper

Instructions

  1. Fold the cooked chicken, diced pimento, and Veg-All mixed vegetables together in a large bowl.
  2. Mix chicken fat or margarine with flour to create a roux.
  3. Cook the roux until smooth and golden, stirring constantly.
  4. Gradually add milk and chicken stock, whipping until the mixture is smooth and thickened.
  5. Add sage, salt, and pepper to the gravy, then fold into the chicken and vegetable mixture.
