Ingredients

  • 2 c. long grain white rice
  • 1 Tbsp. olive oil
  • 4 c. stock
  • 1/2 c. apple juice
  • 1 large onion, diced
  • 2 cloves garlic, diced
  • 2 tsp. lemon juice
  • 1/2 tsp. dried thyme

Instructions

  1. In a 2-quart pan, combine the rice and olive oil.
  2. Stir over medium heat until rice is golden brown, about 5 minutes.
  3. Add stock, apple juice, diced onion, diced garlic, lemon juice, and dried thyme.
  4. Reduce heat to low, cover the pan, and simmer until all liquid is absorbed and rice is tender, about 20 minutes.
  5. Fluff with a fork before serving.
